I do love a mousse and with my recent return to eating chocolate (my migraines stopped me eating it for a few years but now I'm sporting my anti-migraine glasses, I'm good to go!!) I've been on the hunt for a really great mousse recipe. For me, a mousse means bubbles, light as a feather with no sloppy bits at the bottom! No way with the sloppy surprise at the bottom!
So you will need:
Serves 6 (generous servings, you could do less for 8 people easily)
200g dark chocolate 75%+ cocoa solids
120ml warm water
3 large eggs separated
3 tablespoons caster sugar
So this recipe, which I found at Delia Smith, is so quick! In fact I had already tried a mousse recipe which I wasn't happy to take for lunch, so I started again, and this took 15 mins a couple of hours before lunch. It is a raw egg recipe, but its doesn't have any cream.
Break up your chocolate, place in a heat proof bowl over a pan of boiling water, add the 120ml water to the chocolate and melt. Keep the heat on, once the chocolate has melted, stir so you incorporate the water and don't end up with a lumpy mess. Then turn off the water and let the chocolate cool for 5 minutes or so off the heat.
While you chocolate is melting, bring your egg whites up to soft peaks, add the sugar a tablespoon at a time and whisk until you have shiny egg whites
Transfer your chocolate to a mixing bowl. Then add the 3 egg yokes and stir in well, don't let them yokes sit around on top before you stir, your chocolate will still be warm enough to end up with scrambled eggs. So stir stir stir
Then using a large metal tablespoon, mix a spoon at a time of the egg whites into the chocolate until all incorporated and you have no egg white lumps. But fold in carefully, this recipe doesn't take long, so don't rush this part. Doing this part well, will ensure your mousse is moussey! and no sloppy bits at the bottom!
Pour into glasses to serve.
Chill in the fridge for a couple of hours and when you break into it with your spoon, bubbles galore!!
