French crepes, savoury filled pancakes, american pancakes....
This recipe is similar to an american pancake, without the rising agent, we just used natures whisked egg whites.
These taste AMAZING, you will have to take my word for that!
-125g pot of natural yoghurt
-1 whole egg
-1 egg white
-3 tablespoons flour
-1 tablespoon sugar
-2 drops of vanilla extract
-pinch of salt
-butter for cooking
1. With an electric hand whisk, whisk egg whites and sugar until soft and peaky
2. Mix the whole egg, with yohurt, flour, vanilla & pinch of salt
3. Combine some of the egg whites with the yoke mixture to loosen it, then add all the yoke with the whites and gently fold in.
4. Heat the pan and add butter. Scoop 2 tablespoons of batter per pancake. Give it 3 mins, then check by lifting up the edge of a pancake, if golden brown then flip carefully for 3 minutes the other side
We served these with honey, but you could do the US thang, and serve with syrup & bacon.
